Thursday workout:
Rest day (usually Friday, but I had a long day at school on Thursday, so I switched it!)

Friday workout:
Bike – 90 minutes

Thursday was a busy school day!  While I was getting ready for school I threw my leftover pumpkin (from my pumpkin gnocchi) in some oatmeal to make another pumpkin oatmeal bake.  Awesome!  And you better believe there was some Dark Chocolate Dreams hidden in there!!

And while I had remembered to take some chicken out of the freezer before I left for school, we really need to go grocery shopping, so my options for what to do with the chicken for dinner were somewhat limited:/.

In the end I decided to broil it with some taco seasoning, shred it, and then cook it in a sauce pot with some Frank’s Red Hot (insert Frank’s catch phrase here) to make some sort-of-chicken-tacos.  I say sort of not because they were sort of chicken, but only sort of tacos.  I was out of lettuce, had no tomatoes, and only had one burrito left, which I decided to save for Eric.

So instead I cut up my almost-overripe mango and threw it in a bowl with some corn, black beans, and salsa:

And mixed it all together to make my own hearty mango salsa!

Which I threw over the chicken and put in one of my Flat Out multi-grain wraps (with a side of canned green beans…which taste better than they look:/).

Not the most exciting meal, but it’ll do in a pinch!  I’m excited to go grocery shopping this weekend to replenish my stash of food!!:)

And because Eric was still at work and I could therefore not yet indulge in our Georgetown Cupcakes and I am incapable of not having something sweet immediately following dinner and I had a GIANT three-pound carton of strawberries I am trying to finish all on my own (and apparently I am going for the record for longest run-on sentence ever), I had some strawberries with chocolate syrup drizzled on them.

And of course we split cupcakes when Eric got home.  Tonight it was Lemon Berry and Chocolate Hazelnut–yum!!  The Chocolate Hazelnut was good, but nothing too exciting.  The Lemon Berry on the other hand was amazing!

Only two more to go!!:(  I am already sad in anticipation of them being gone!!

Now, I will finally get to the subject of this post:).  After my workout this morning I decided to make another SMOOTHIE!  This time it was inspired by the lovely Rach at This Italian Family, who commented on my last smoothie post saying that one of her favorite smoothies was a peanut butter blast smoothie, with banana, vanilla soy milk, vanilla yogurt, and peanut butter.  Yum!  After reading her comment I immediately commandeered our single remaining banana and threw it in the freezer (after I took the peel off, mind you–don’t make that mistake!).

While Rach inspired me with a general smoothie idea, she did not provide specifics, so I just threw a bunch of things in the blender…AND IT TURNED OUT AMAZING!!!

This thing was super tasty and pretty darn healthy!!  I put one frozen banana, 1/2 cup Fage 0% Fat Greek Yogurt, 1/2 cup Skim Deluxe milk, 1 teaspoon vanilla extract, and 1 tablespoon creamy peanut butter.  It would probably realistically serve two (it filled my big pub glass to the brim and still had some leftover).  Stats are approximately 315 calories, 8 grams of fat, 43 grams of carbs, and 21 grams of protein!!

Okay, well I’ve gotta run!  Our friends managed to score FREE tickets to see the Blue Man Group tonight and I am BEYOND psyched!  Happy Friday everyone, I hope you have a great weekend!

-Beside seeing the show tonight, I am mostly just trying to work on school work this weekend (and grocery shopping!).  Lamesauce, I know, but I have two take-home midterms due next week:(.

-This peanut butter blast one was an awesome idea (thanks Rach!!), so I figure I might as well see if anyone else has some great ones!:)

  1. Yay!! So glad you like the PB Blast!! I should’ve thought to add the specifics in that post, haha! You actually got the recipe exactly right! (original: Way to go! I did forget to tell you that I usually put a bit of cinnamon on top for that extra pizazz. 🙂 Glad you enjoyed it!! 🙂
