This egg salad recipe is from Ellie Kruger’s “The Food You Crave.” I love this cookbook! Most of the recipes are light, fresh, healthy, and of course delicious. Because Ellie “healthifies” her recipes, this egg salad only uses half of the egg yolks and a small amount of mayo.
Awesome Egg Salad
As written this recipe serves 1, but is easy doubled/tripled/etc.
2 hard-boiled eggs
1 teaspoon mayonnaise
1/4 teaspoon Dijon mustard
1 1/2 teaspoons finely chopped fresh chives (I used dried)
Salt and freshly ground pepper
1 teaspoon diced red onion (optional)
Red bell pepper slices (optional)
Discard the yolk from one of the hard-boiled eggs. Dice the remaining whole egg and egg white and put it into a small mixing bowl. Add the mayonnaise and mustard and stir with a fork, mashing somewhat to your desired consistency. Stir in the chives and season with salt and pepper.
Ellie makes a wrap out of the egg salad and tops it with red pepper and red onion. I just diced a small amount of red onion and added it to the salad, and topped the sandwich with lettuce and red bell pepper slices.
