This is one of my favorites because it’s SO easy! It only takes three ingredients, and it’s usually three I always have in my house: chicken, salsa, and corn. The juices from the salsa and corn make the chicken very moist and yummy. I’ll eat it by itself sometimes, but I usually eat it over some brown rice, over a salad, or in a wrap. It’s great with avocado on top! For a power meal, I’ll sometimes make the brown rice with cooked spinach, black beans, and scrambled eggs. Yum!
1 lb (approx.) chicken breasts (I usually do two breasts), can be frozen or thawed
1 cup salsa of your choice
1 can (including water) corn (I love it with sweet corn!)
Place chicken breasts on the bottom of the crock pot. Cover with salsa and corn. Cover crock pot and cook on high for 4 to 6 hours if chicken is frozen and 1.5-3 hours if thawed.
Once chicken is done (you can check by inserting a knife into one of the breasts), use a fork to shred the chicken. Stir mixture.
