Crock Pot Roast Pork with Fruit

This pork is sooooo good!  I could probably eat it every night, and I don’t usually like pork very much.  I made it with dried prunes and dried apricots, because that was what I had in my kitchen.  So awesome.  (Pictured with roasted acorn squash.)  Recipe from eatbetteramerica.com.

Crock Pot Roast Pork with Fruit

Prep Time: 15 min
Start to Finish: 7 hr 15 min
Makes: 8 servings

Ingredients
1 medium onion, sliced
1 boneless pork loin roast (2 lb)
1 package (8 oz) dried pears, dried plums (1 1/2 cups), or dried apricots
1/2 cup apple juice
1/2 teaspoon salt
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cinnamon

Directions
In 4- to 5-quart slow cooker, place onion.  Place pork on onion; top with fruit.
In small bowl, mix remaining ingredients; pour over fruit.
Cover; cook on Low heat setting 7 to 9 hours or until pork is tender.  Serve fruit mixture/juices over pork.
