Kale, Cannellini, and Kielbasa Soup

I love a good soup recipe! I’m not sure how healthy this one is because of the Kielbasa, but the rest of the ingredients are pretty good:).  One of my new favorites!!  (Pictured with garlic toast.)

Kale, Cannellini, and Kielbasa Soup

1 lb Kale – chopped/torn (about 6 cups)
2 cans cannelini beans (drained and rinsed)
1 (28 oz) can diced tomatoes
1 lb Kilbasa type sausage
1 medium yellow onion diced
2 tbsp minced garlic
1 tsp each – season to taste using whatever you have in your cupboard, such as rosemary, oregano, pepper, thyme, herbs de provence, onion powder, etc.  (I used oregano, parsely, basil, and pepper.)  I recommend NOT adding salt to this because the Kielbasa is salty.
6 cups chicken stock/broth (I used low sodium)
olive oil – enough to cover the bottom of soup pot

Saute onions, garlic, sausage in oil – about 5 mins.
Stir in Kale and cook until wilted – about 10 mins.
Add stock, tomatoes, beans and spices.
Simmer about 45 mins.
