Turkey burgers stuffed with mozzarella and red pepper, yum! I usually throw some oregano, red pepper flakes, and a little bit of salt and pepper into the meat before I make it into patties. Also, I usually buy the red peppers in a jar with water, not oil. Adds extra calories for no good reason! Safeway has a good brand that is cheap. (Pictured with a spinach, strawberry, mozzarella, and almond salad. Double heaven.)
Stuffed Turkey Burgers
1 lb ground turkey
1 jar roasted red peppers (I prefer the ones in water vs. oil)
1 small package mozzarella cheese
seasons as desired
Place ground turkey in a large mixing bowl. Season as desired (I usually add some season salt, crushed red peppers, oregano, etc.). Take a small portion of the meat and roll it into a ball; press the ball onto a cutting board or piece of wax paper to flatten into a patty. The patty should be very thing (about 1/2 inch) since you will be adding another patty on top. Place a small slice of mozzarella and a piece of roasted red pepper on top of the patty. Make another patty out of the meat, approximately the same size, and place on top. Pinch the sides closed.
Grill or pan-fry the burgers to desired level of cooking.
