Anniversary Dinner and Stuffed Red Peppers

As I said in my last post, Sunday was my and Eric’s one year wedding anniversary:).  We went out to dinner on Saturday to celebrate. I had wanted to go to one of the restaurants my foodie friend Beth suggested, but we had a lot going on this weekend and ended up deciding to stay close to home.

We went to the Warehouse Bar and Grill in Old Town.  It was great!

I am also going to call this my WIAW “Anniversary Dinner Edition.”:)

I started with the She Crab soup. DELICIOUS. It was creamy and spicy and crabby. Yum.

I decided to stick with the seafood theme and ordered the Seafood Sampler (hey, it was a special occasion, right?;).

Roasted potatoes, steamed veggies, a crab leg, scallops, and half a Maine lobster tail topped with lump crab meat. The food was good, but a bit heavy (the lobster and scallops had a cream sauce on them) so after my soup I could only eat about a third of my meal. Oh well, you can never go wrong with leftovers!

For dessert we got the Triple Chocolate Decadence. It was really good. So good in fact that even though I was really full from dinner I still went to town on the cake.

After dinner we walked around by the waterfront.

It was a great night! But the celebrating is not quite over yet, because this past weekend we also booked a vacation to SAN FRANCISCO for July.

SO. Psyched.

We have not been on a vacation since our honeymoon last year, so we both need one bad. I can’t wait!

On a completely unrelated note, I wanted to share the stuffed red pepper recipe I mentioned in my last WIAW.

These peppers are amazing. They are stuffed with lean ground turkey, spinach, zucchini, onion, and bulgur (which makes them super filling), and topped with stewed tomatoes and feta cheese. Delicious, healthy, and filling. It doesn’t get much better than that!

Stuffed Red Peppers
Recipe from Ellie Kruger’s The Food You Crave

Ingredients:
1 pound of lean ground beef or turkey (I used turkey)
1 10 oz package of frozen spinach, thawed and drained
1 medium zucchini, coarsely grated
1 small onion, minced (about 1 cup)
1/2 cup bulgur
1 large egg, lightly beaten
1/2 teaspoon dried oregano
1/2 teaspoon salt
freshly ground black pepper to taste
3 medium red bell peppers, cut in half length-wise and cored
2 14.5 oz no-salt-added stewed tomatoes, chopped and juices reserved
1/3 cup crumbled feta cheese

Directions: Preheat the oven to 350 degrees. In a large bowl, combine all ingredients except red peppers, tomatoes, tomato juices, and feta. Place the pepper halves in a 9 x 13′ baking dish lightly sprayed with cooking spray. Fill peppers with the meat mixture and pour the tomatoes and tomato juice over peppers. Sprinkle with feta cheese and cover the dish with aluminum foil. Bake for 30 minutes covered, then remove the aluminum foil and bake for another 45 minutes, or until filling is completely cooked and the peppers are tender.

When I first tried these I thought for sure I would need at least two peppers (if not more–what can I say, I eat a lot when I am training:). But these things sneak up on you, and shortly after eating just one half of a pepper I was pretty stuffed!

    SF is awesome. I really like walking around/running by the water. You can kayak in the bay too, which is great. There are 452 different companies down on the wharf where you can rent the boats. Also, if you have a car, go hiking in Muir Woods. It’s gorgeous!

    Congrats on your one year anniversary!! That is wonderful 🙂 And I’m a little jealous of your upcoming trip to San Fran. I actually get to go to California next week, but it’s for work…not a vacation. I’m not complaining (I’d rather be there than at my desk) but I’m really hoping I’ll have time to do some relaxing/site seeing while I’m there.

    • Thanks, Lauren! Where in CA are you going? That’s awesome that you get to go for work (and definitely more fun than just being in the office), but I sure hope you can find some time to squeeze in some fun stuff, too!:)

  10. Sounds like the perfect laid-back anniversary dinner! And those stuffed peppers look delicious (and pretty easy to veganize, I might have to give them a go!). San Francisco is on my list of places-to-go-in-the-U.S., your trip sounds exciting, I can’t wait to hear about it (and make some dreams plans for my future one 😀 )

    • It was great!:) Yeah as I was posting that I was thinking of my veggie/vegan friends. I don’t have a lot of experience veganizing dishes (although I’d like to get more), so I have no idea what you would use to replace the turkey, but I hope you can figure something out because the rest of it is so awesome:). Let me know if you make it happen!:)

    Yay I love SF. I went for New Years. You should sign up for Living Social/Groupon deals now (and then unsubscribe after your trip). I saw a bunch for bike tours and we ended up getting one for a segway tour which was really fun – especially at half price. You should also get tix for Alcatraz in advance because they sell out. If you want a fun night out, go to Johnny Foley’s Irish House (near Union Square) when they have their dueling pianos. We didn’t know where to go for NYE and we stumbled upon that piano bar and had a blast. Have fun!!

  18. Happy Anniversary! Yummy dinner!! We’ve been to SF a few times – there are lots of neat little neighborhoods to explore. Go to Chinatown and visit a Fortune Cookie Factory. The one we went to was a tiny little hole in the wall place with two ladies making cookies. It was neat in a very random way. If you want to go to Alcatraz, book your tour long before you actually go – the tours always sell out. Also, SF is always cold – even in the summer. Bring jackets for night time or you’ll have to buy ugly ones at a tourist trap. 🙂 Have a great time.

    And yes, I’ve been to San Fran – everything that everyone has posted about is worth seeing! We just went a few weeks ago for one night (we were in town for a wedding in Napa) and just walked around Fisherman’s Wharf. It was great! Definitely bring some warm clothes though! 🙂

  23. Happy Anniversary! We always try and extend out anniversaries and birthdays as much as possible – so good for you guys. That seafood platter is likely exactly what I would have ordered – I can’t get enough seafood.

    SF vacay – nice! Ive only been once for about 48 hrs so don’t have much to recommend. Have fun!!
    Summer plans? A few trips to the (jersey) shore, a weekend in florida, and a quick trip to San Diego for a wedding. Summer is always too short.

    Fried zucchini looks great! The other day I tried a slice of a fried pickle that a friend ordered from this crazy restaurant called Sillys!! They were actually quite good, but very unusual. Your fried zucchini just reminded me of them 🙂
